2 dashes Angostura Bitters

2 dashes Orange Bitters
1-2 drops Absinthe (optional)

½ oz honey simple syrup
½ oz fresh lemon juice
3 oz ginger beer
Build in an iced highball. Garnish with candied ginger.

1 ½ oz Neversink Gin
¼ oz Ginger Liqueur (can substitute for Elderflower)
¼ oz simple syrup
½ oz fresh lemon juice
Top with champagne or sparkling wine
Shake first 4 ingredients well over ice, strain into flute, top with Champagne
20th Century Cocktail
1 ½ oz Neversink Gin
½ oz Lillet, Cocchi Americano or Vermouth Blanc
½ oz fresh lemon juice
½ oz Creme de Cacao
Shaken well, strained into coupe glass. Garnish with lemon twist.
Tom Collins
2 oz Neversink Gin
½ simple syrup
½ fresh lime juice
Top with seltzer
Shake first 3 ingredients, strain into Collins glass, top with selzer. Garnish with cucumber slice.
Neversink Martini
2 oz Neversink Gin
1 oz Vermouth Blanc
2 dashes of grapefruit bitters
Stir well, strain in coupe glass. Garnish with lemon or grapefruit peel.
Pink Lady
1 ½ oz Neversink Gin
½ oz fresh lemon juice
½ oz Neversink Apple Brandy
½ oz pomegranate grenadine
Egg white
Combine into mixing tin, shake without ice to emulsify egg, add ice and shake again, strain into coupe glass
Neversink Negroni
1 ½ oz Neversink Gin
½ oz Campari or Contratto Bitter
1 oz Vermouth Rosso
Stirred, served in tumbler on the rocks. Garnish with orange peel.
